After finding a new inspiration from Nicola Adams at the 2012 London Olympics, Pippa Middleton boxed inside the ropes for her new Sport & Social Column for the telegraph. Her new monthly column inspired by her pursuits in the sporting and social world kicked off in fashion with the help of Soulmatefood’s Sportskitchen.
After a gruelling workout Pippa turned to our Sportskitchen performance meals to aid with her recovery. We recommended our Green Chicken Quinoa, perfect for pre or post workouts, Pippa said ‘It is incredibly healthy and you can adapt the ingredients to make it a pre- or post-training meal. Quinoa is the perfect slow release, low-GI carbohydrate, and the chicken provides amino acids to help aid muscle recovery’
Check out the tasty Green Chicken Quinoa recipe below;
100g quinoa (if eating post-training, use 80g)
1/2 tsp fresh chilli
2 spring onions
A few mint leaves
A handful of coriander
100g chicken fillets (if eating post-training, use 120g)
Pinch of smoked paprika
Pinch of allspice
1 tbsp mango purée
Half a mango
30g peppadew peppers
Juice and zest of 1 lime
30g feta cheese
15g pomegranate seeds
20g edamame beans
Cook the quinoa according to packet instructions, then drain and chill.
For the spinach mix, put the chilli, spinach and spring onions into a blender, tear in the mint and most of the coriander then blitz until finely chopped.
Put chicken fillets in a bowl and drizzle lightly with olive oil, then add the smoked paprika, allspice and mango purée.
Mix well then cook in a frying pan until the chicken is blackened. Set aside.
Dice the mango into chunks and cut the peppadew into quarters.
Add the spinach mix to the quinoa, season and add grated lime zest.
Add the diced feta, some of the pomegranate and the rest of the coriander. Mix in the mango, peppadew and the edamame beans.
Shred the chicken and add to the quinoa bowl, then mix thoroughly.
Garnish with a lime wedge and the remaining pomegranate seeds.
