To make 100g: (1 bite=approx 10g)
65g pitted dates
15g flaked almond
1-2 teaspoon water (depending on the consistency)
half a teaspoon vanilla essence
a pinch ground ginger
a pinch ground cinnamon
a pinch ground almond
METHOD Put the dates on a steamer tray in oven set at 160c until they are soft.
Pulse the almonds and pecans, add the dates, vanilla essence, ginger, cinnamon and water and blend until binding.
Place in a zip lock bag and chill until the set.
To assemble: Dice the mixture ‘block’ into 10g gingerbread bites (or to a preferred size)
Roll the bites in the ground almond.
