It’s National Banana Bread Day! What a great excuse to make our Banana and Walnut Bread with Earl Grey Cream
Banana Bread Recipe
This recipe is one of our favourite things in the Soulmatefood kitchen! It’s a great satisfying start to the day or can also be enjoyed as lovely mid-morning treat. It can also be used as a great pre-gym booster to deliver enough quick energy to get you through your workout without you feeling too full.

#TopTip: You can freeze this in slices and pop it in the toaster for those mornings when time is in short supply!

For the Banana Bread
125g low-fat spread
160g soft brown sugar
2 large eggs
125g buckwheat flour

125g brown rice flour
2 tsp baking powder
3 ripe bananas
120g walnuts, chopped
½ tsp vanilla extract

For the Earl Grey cream
50ml semi-skimmed milk
2 Earl Grey tea bags
30g unflavoured protein powder
110g quark
25g agave syrup

Banana Bread Method
Preheat the oven to 180°c and line a loaf tin with baking parchment.
Cream together the low-fat spread and the sugar until light and fluffy.
Whisk in the eggs one at a time until mixed thoroughly.
Put the flours and baking powder together in a bowl and fold this dry mixture into the eggy mix a third at a time until fully incorporated.
Crush the bananas with the back of a fork and fold into the mixture along with the walnuts and vanilla extract.
Pour the mixture into the prepared tin and bake in a preheated oven for 45–50 minutes.
Check that it’s done by inserting a skewer into the middle of the cake, it should come out clean.

Earl Grey Cream Method
While the cake is cooling, make the cream.
Heat the milk with the tea bags in a small saucepan and bring to the boil.
Remove from the heat and allow the Earl Grey flavours to infuse for 10 minutes.
Remove the tea bags and discard, transfer the liquid into a beaker and allow to cool.
Once cool, mix in the rest of the ingredients to form a smooth, thick cream. This cream can be stored in a sealed container in the fridge for up to three days.
Cut two slices (1cm thick) of the bread per portion and serve with 1 tablespoon of the fragrant tea cream.
